Hot cheese & vegetable sandwich
Ingredients
for 2 pieces
| 1 tbsp | olive oil |
| 100 g | courgettes, cut into slices approx. 5 mm thick |
| ½ | red pepper, thinly sliced |
| ¼ tsp | salt |
| a little | pepper |
| ½ | red onion, cut into thin rings |
| 1 tbsp | tomato puree |
| 1 tsp | balsamic vinegar |
| ½ tbsp | olive oil |
| 1 tsp | liquid honey |
| ½ tsp | dried oregano |
| 2 pinch | salt |
| 130 g | baguettes, cut in half lengthwise and crosswise |
| 6 slice | raclette cheese |
How it's done
Vegetables
Heat the oil in a non-stick frying pan. Add the courgettes and peppers, stir-fry for about 5 mins. Remove, season and set aside. Reduce the heat, add the onion, sauté for approx. 3 mins., set aside.
Sauce
Place the tomato puree and all the other ingredients up to and including the salt in a small bowl, stir well.
Sandwich
Spread the sauce on the cut sides of the bread. Distribute the reserved vegetables and 3 slices of cheese each over the bread bases. Place the bread tops on, then arrange the sandwiches on a baking tray lined with baking paper.
To bake
Approx. 10 mins. in the centre of an oven preheated to 220 °C.
