Tomato and melon salad with burrata

Ingredients

for 4 people

Melon
400 g cantaloupe melons peeled, cored, diced
red onion, finely chopped
organic lime, grated zest and the juice
½ bunch basil, finely chopped
½ bunch peppermint, finely chopped
½ tsp salt
a little  pepper
To serve
600 g tomatoes, thinly sliced
200 g burrata piccola (approx. 150 g)
1 tbsp sweet balsamic vinegar
1 tbsp olive oil
¼ tsp sea salt

How it's done

Melon

In a bowl, mix the melon with all the other ingredients up to and including the mint, season.

To serve

Arrange the tomatoes and melon on a platter, top with the burrata. Drizzle with balsamic and oil, sprinkle with fleur de sel.
