Tomato and melon salad with burrata
Ingredients
for 4 people
| 400 g | cantaloupe melons peeled, cored, diced |
| 1 | red onion, finely chopped |
| 1 | organic lime, grated zest and the juice |
| ½ bunch | basil, finely chopped |
| ½ bunch | peppermint, finely chopped |
| ½ tsp | salt |
| a little | pepper |
| 600 g | tomatoes, thinly sliced |
| 200 g | burrata piccola (approx. 150 g) |
| 1 tbsp | sweet balsamic vinegar |
| 1 tbsp | olive oil |
| ¼ tsp | sea salt |
How it's done
Melon
In a bowl, mix the melon with all the other ingredients up to and including the mint, season.
To serve
Arrange the tomatoes and melon on a platter, top with the burrata. Drizzle with balsamic and oil, sprinkle with fleur de sel.
