Melon and feta chessboard salad

This recipe is a veritable feast for the eyes! Melon, cucumber and feta are arranged in a chessboard pattern to create a miniature work of art on your plate. Finished with a fresh lemon & olive oil dressing and garnished with basil and mint, this summer salad is incredibly aromatic and wonderfully refreshing – a real highlight both in terms of flavour and appearance.

Ingredients

for 4 people

Salad
½  cucumber, cut into 1.5 cm cubes
½  charentais melon, cut into 1.5 cm cubes
¼  baby watermelon, cut into 1.5 cm cubes
250 g feta, cut into 1.5 cm cubes
Dressing
½  lemon, the whole juice
3 tbsp olive oil
¼ tsp salt
a little  pepper
2 sprig basil, torn into pieces
2 sprig peppermint, torn into pieces

How it's done

Salad

Plate up the cucumber, melon and feta in a chessboard pattern.

Dressing

Whisk the lemon juice, oil, salt and pepper, drizzle over the salad. Garnish with herbs.
