Beetroot salad with yoghurt sauce
Ingredients
for 2 person
| 500 g | boiled beets, cut into wedges |
| 1 | shallot, finely chopped |
| ¼ tsp | salt |
| 2 tbsp | apple vinegar |
| 3 tbsp | plain greek yoghurt |
| ½ tsp | hot curry powder |
| ¼ tsp | salt |
| a little | pepper |
How it's done
Beetroot
Mix the beetroot and shallot in a bowl, season with salt, mix, leave to absorb for approx. 5 mins.
Salad
Mix the vinegar with all the remaining ingredients in a small bowl, then add to the beetroot and mix.
