Apricot and cardamom sorbet
Ingredients
for 4 people
| 1 dl | water |
| 100 g | sugar |
| 600 g | apricots, pitted, chopped |
| 2 tbsp | lemon juice |
| ¼ tsp | ground cardamom |
| 1 | apricot, thinly sliced |
| 2 tbsp | shelled almonds, roasted, coarsely chopped |
How it's done
Sorbet
Place the water and sugar in a pan, mix, bring to the boil, stirring occasionally. Reduce the heat, simmer for approx. 2 mins., Leave to cool. Add the apricots, lemon juice and cardamom, puree, pass through a sieve into a wide stainless steel bowl, leave to cool.
To freeze
Cover and freeze for approx. 4 hrs., stirring three times with a whisk. Remove the sorbet, beat until smooth using the whisk on a mixer, return to the freezer for approx. 1 hr.
To serve
Shape the sorbet into balls, serve in glasses, sprinkle with apricots and almonds.
