Cherry tomato fritters

It's hard to believe, but these fritters are held together solely by cherry tomatoes – yet the chickpea batter makes it possible. Ideal as a summery side dish with a fresh salad or as a highlight for an apéritif. And if you fancy, you can enhance them with toppings as you like - let your imagination run wild!

Ingredients

for 4 pieces

Mixture
80 g chickpea flour
¾ dl water
½ tsp salt
250 g cherry tomatoes, cut in half
To fry
2 tbsp olive oil
a little  pepper

How it's done

Mixture

Place the chickpea flour, water and salt in a bowl, mix well. Add the cherry tomatoes, mix.

To fry

Heat the oil in a wide frying pan. Place the mixture in the pan in 4 portions, shape into rounds. Reduce the heat, fry the fritters for approx. 2 mins. on each side, season.
