Wraps with za'atar cauliflower

Since my first trip to the Middle East, where I discovered the tasty spice mix za'atar, I've become a huge fan. However, it's not always easy to have all the ingredients for a traditional recipe to hand. Therefore, this recipe involves making a "homemade" version of za'atar, which is quick and easy. Moreover, it adds an exotic touch to these crispy yet meltingly tender cauliflower wraps. Every bite is an invitation to embark on a journey!

Ingredients

for 4 portions

House-made za'atar
2 tbsp dried thyme
1 tbsp toasted sesame seeds
organic lemon, use just half of grated zest
Cauliflower
800 g cauliflower, cut into florets
3 tbsp olive oil
½ tsp salt
Tahini sauce
4 tbsp tahini (sesame paste)
2 tbsp lemon juice
1 tbsp maple syrup
1 pinch sea salt
To serve
gluten-free wraps
200 g hummus
iceberg lettuce leaves, cut into strips
½  cucumber, in slices
140 g pomegranate seeds

How it's done

House-made za'atar

Place the thyme, sesame and lemon zest in a small bowl, mix.

Cauliflower

Place the cauliflower, oil and salt in the dish, mix.

To bake

Approx. 30 mins. in the centre of an oven preheated to 200 °C.

Tahini sauce

Place the tahina, lemon juice, maple syrup and salt in a bowl, mix well.

To serve

HIER KOMMT: gluten-free tortillas

Spread the hummus over the tortillas. Top with salad, cucumber, and cauliflower, drizzle the dressing over the top, sprinkle with pomegranate seeds, then fold or roll up.
