Bean salad with chilli dressing
Ingredients
for 2 people
| 300 g | green beans, prepared, halved |
| salted water, boiling | |
| ½ tbsp | olive oil |
| 1 | onion, finely chopped |
| 1 | organic lime, grated zest and the juice |
| 1 ½ tbsp | olive oil |
| ¼ tsp | chilli flakes |
| ¼ tsp | salt |
| a little | pepper |
| 1 tbsp | toasted sesame seeds |
| ½ bunch | coriander, torn into pieces |
How it's done
Beans
Cook the beans in boiling salted water for approx. 10 mins. until just soft. Rinse the beans in cold water, drain. Heat the oil in the same pan. Add the onion, sauté for approx. 4 mins.
Dressing
Place the lime zest and all the other ingredients in a bowl, mix. Add the beans and onion, mix, plate up.
