Pasta with tomatoes and burrata
Ingredients
for 2 people
| 150 g | spaghetti |
| salted water, boiling |
| 1 tbsp | olive oil |
| 1 | onion, finely chopped |
| 1 | garlic clove, finely chopped |
| 1 tbsp | tomato puree |
| 250 g | different coloured cherry tomatoes, cut in half |
| 4 sprig | thyme |
| salt and pepper to taste |
| 150 g | burrata, cut in half |
| ½ tbsp | olive oil |
| a little | pepper |
How it's done
Pasta
Cook the spaghetti in boiling salted water until al dente. Drain the pasta, retaining approx. 150 ml of the cooking water. Return the pasta to the pan, cover and keep warm.
Sauce
Heat the oil in a pan. Add the onion and garlic, sauté for approx. 3 mins. Add the tomato puree and cook for approx. 1 min. Add the tomatoes, thyme and the reserved cooking water, bring to the boil. Reduce the heat, simmer (uncovered) for approx. 5 mins., stirring occasionally, season. Add the pasta, mix and heat through.
To serve
Plate up the pasta and burrata, drizzle with oil, season.
