Chicken with lemon gremolata

Ingredients

for 4 person

Chicken
chicken thighs (each approx. 250 g)
1 tbsp olive oil
¾ tsp salt
Charcoal/gas/electric grill
80 g bacon strips
organic lemon, halved and sliced
Gremolata
organic lemon, zest peeled with a peeler, finely chopped and 1 tbsp of juice
1 tbsp olive oil
1 bunch flat-leaf parsley, finely chopped
30 g pitted green olives, finely chopped
2 pinch salt
a little  pepper

How it's done

Chicken

Brush the chicken with oil, season with salt.

Charcoal/gas/electric grill

With the lid down, grill the chicken over/on a medium heat (approx. 200 °C) for approx. 15 mins. on each side. Grill the bacon and lemon alongside for the final 2 mins.

Gremolata

Finely chop the bacon, add to the bowl along with the grilled lemon slices, lemon zest, and all the other ingredients, mix.

To serve

Serve the chicken with the gremolata, finely chop the bacon, sprinkle on top.
