Apricots with Gorgonzola
Ingredients
for 4 people
| 100 g | blue cheese (e.g. Gorgonzola) |
| 125 g | ricotta |
| 1 tbsp | olive oil |
| 4 | apricots, halved, pitted |
| ½ bunch | basil, finely chopped |
| 25 g | pine nuts, roasted |
| a little | pepper |
How it's done
Gorgonzola
Mash the Gorgonzola with a fork, combine with the ricotta in a bowl, mix well, set aside.
Apricots
Heat the oil in a grill or non-stick frying pan. Add apricot halves, grill for approx. 5 mins. on each side. Remove, allow to cool slightly.
To serve
Arrange the Gorgonzola on a platter. Top with apricots. Garnish with basil and pine nuts, season.
