Halloumi and courgette salad
Ingredients
for 4 people
| 400 g | courgettes, cut into 1.5 cm-thick slices |
| olive oil, for brushing | |
| ½ tsp | salt |
| 150 g | halloumi, torn into pieces |
| 2 tsp | Dijon mustard |
| 2 tbsp | red wine vinegar |
| 2 tbsp | olive oil |
| 1 | garlic clove, squeezed |
| ¼ tsp | salt |
| a little | pepper |
| 100 g | baby spinach |
| 1 | red onion, cut into rings |
| ½ bunch | peppermint, leaves torn off |
How it's done
Grill pan
Brush the courgette with a little oil, season with salt, place in portions into a hot grill pan, grill for approx. 1 min. on each side. Remove and set aside. Brush the halloumi with a little oil, place in the same pan, grill all over for approx. 5 mins. Remove and set aside.
Dressing
In a small bowl, mix the mustard with all the other ingredients up to and including the pepper.
Salad
Place the spinach, onion, and mint in a bowl, add half the dressing, mix, then arrange the salad. Top with the courgette and halloumi, drizzle with the remaining dressing.
