Vegan kimchi mayonnaise
Ingredients
for 4 dl
| 250 g | kimchi |
| 260 g | tofu, plain, cut into pieces |
| 4 tbsp | coconut milk |
| 3 tbsp | vinegar |
| 2 tbsp | lemon juice |
| ½ tbsp | Vegan red curry paste |
| ½ tsp | salt |
How it's done
Place the kimchi and all the other ingredients in a blender, puree until smooth. Pour the vegan mayonnaise into a jar or bowl, cover and chill for at least 1 hr.
