Greek pasta salad with feta
Ingredients
for 4 people
| 200 g | pasta (e.g. risoni) |
| salted water, boiling |
| 4 tbsp | red wine vinegar |
| 4 tbsp | olive oil |
| 1 | organic lemon, use a little grated zest and 2 tbsp of juice |
| 1 ½ tbsp | liquid honey |
| ¾ tsp | salt |
| a little | pepper |
| 200 g | cherry tomatoes, cut in half |
| 200 g | feta, crumbled |
| 1 | red onion, cut into strips |
| ½ | cucumber, cut into cubes |
| 1 | red pepper, cut into pieces |
| 80 g | pitted black olives, drained |
| 4 sprig | oregano, leaves torn off |
How it's done
Pasta
Cook the pasta in boiling salted water for approx. 10 mins. until al dente, drain, rinse with cold water.
Dressing
In a bowl, mix the vinegar with all the other ingredients up to and including the pepper.
Salad
Add the cherry tomatoes along with all the remaining ingredients to the dressing, add the Risoni, mix, serve.
