Greek pasta salad with feta

Ingredients

for 4 people

Pasta
200 g pasta (e.g. risoni)
  salted water, boiling
Dressing
4 tbsp red wine vinegar
4 tbsp olive oil
organic lemon, use a little grated zest and 2 tbsp of juice
1 ½ tbsp liquid honey
¾ tsp salt
a little  pepper
Salad
200 g cherry tomatoes, cut in half
200 g feta, crumbled
red onion, cut into strips
½  cucumber, cut into cubes
red pepper, cut into pieces
80 g pitted black olives, drained
4 sprig oregano, leaves torn off

How it's done

Pasta

Cook the pasta in boiling salted water for approx. 10 mins. until al dente, drain, rinse with cold water.

Dressing

In a bowl, mix the vinegar with all the other ingredients up to and including the pepper.

Salad

Add the cherry tomatoes along with all the remaining ingredients to the dressing, add the Risoni, mix, serve.
