Courgette with lime rice
Ingredients
for 4 people
| 1 tbsp | butter |
| 1 | shallot, finely chopped |
| 250 g | long grain rice |
| 5 dl | vegetable bouillon |
| ½ bunch | dill |
| 1 | organic lime, grated zest and the juice |
| 1 tbsp | olive oil |
| 500 g | courgettes, halved crosswise cut lengthwise into quarters |
| 1 | garlic clove, squeezed |
| 4 tbsp | soy sauce |
| 2 tbsp | water |
How it's done
Pilau rice
Heat the butter in a pan. Add the shallot, sauté for approx. 2 mins. Add the rice and sauté until translucent, stirring constantly. Add the stock, bring to the boil, reduce the heat, cover and simmer for approx. 20 mins. over a medium heat until all the liquid has been absorbed. Add the dill, lime zest and juice, mix.
Courgettes
Heat the oil in a non-stick frying pan. Add the courgettes and stir fry for approx. 3 mins. Reduce the heat, add the garlic, fry for approx. 2 mins. Add soy sauce and water, cook for approx. 4 mins. until just soft. Plate up the rice with the courgette.
