Cauliflower with balsamic blackberries

Ingredients

for 4 people

Blackberries
1 dl balsamic vinegar
1 ½ tbsp sugar
½  cinnamon stick
a little  pepper
250 g blackberries
Cauliflower
600 g cauliflower, cut into wedges
2 tbsp olive oil
½ tsp salt
To serve
1 tsp Dukkah (spice mix)
20 g Micro Greens

How it's done

Blackberries

Pour the balsamico into a pan along with all the other ingredients up to and including the pepper, bring to the boil. Add the blackberries, cover and set aside.

Cauliflower

Spread the cauliflower on a baking tray lined with baking paper. Drizzle with oil, season with salt, mix.

To bake

Approx. 40 mins. in the centre of an oven preheated to 200 °C. Remove.

To serve

Arrange the cauliflower on a platter, sprinkle with dukkah. Top with the blackberries, their juice, and the microgreens.
