Ingredients

for 10 pieces

Batter
150 g white flour
80 g sugar
2 tbsp matcha powder
2 tsp baking powder
1 pinch salt
ripe bananas
50 g leaf spinach
1 dl oat drink
3 tbsp vanilla yoghurt
2 tbsp rapeseed oil
1 tsp lemon juice
30 g macadamia nuts
Topping
½  banana, sliced lengthwise
1 tbsp macadamia nut, coarsely chopped

How it's done

Batter

In a bowl, mix the flour with all the other ingredients up to and including the salt. Place the bananas in a blender along with all the other ingredients up to and including the lemon juice, puree until smooth. Add the banana mixture and nuts to the flour mixture, mix. Transfer the cake mixture to the prepared tin.

Topping

Arrange the banana slices on the cake, sprinkle the nuts on top.

To bake

Approx. 50 mins. in an oven preheated to 170 °C (convection). Remove from the oven, allow to cool slightly, then remove the cake from the tin and leave to cool completely.
