Lettuce with pistachio dressing

Ingredients

for 4 people

Dressing
70 g salted, roasted pistachios
1 dl water
organic lime, grated zest and the juice
a little  pepper
To serve
baby lettuce, quartered
½ bunch dill, torn into pieces
30 g unsalted, shelled pistachios, coarsely chopped

How it's done

Dressing

Place the pistachios in a food processor and puree until creamy (approx. 5 mins.). Add water until a creamy mixture is formed. Add lime zest and juice, stir, season.

To serve

Arrange the lettuce slices on a platter. Drizzle with the dressing, then scatter the dill and pistachios on top.
