Lettuce with pistachio dressing
Ingredients
for 4 people
| 70 g | salted, roasted pistachios |
| 1 dl | water |
| 1 | organic lime, grated zest and the juice |
| a little | pepper |
| 3 | baby lettuce, quartered |
| ½ bunch | dill, torn into pieces |
| 30 g | unsalted, shelled pistachios, coarsely chopped |
How it's done
Dressing
Place the pistachios in a food processor and puree until creamy (approx. 5 mins.). Add water until a creamy mixture is formed. Add lime zest and juice, stir, season.
To serve
Arrange the lettuce slices on a platter. Drizzle with the dressing, then scatter the dill and pistachios on top.
