Walnut and sesame cookies
Ingredients
for 15 pieces
| 150 g | butter, soft, cut into pieces |
| 150 g | coarse cane sugar |
| 3 tbsp | toasted sesame oil |
| 2 | eggs |
| 250 g | white flour |
| ¾ tsp | sodium bicarbonate |
| ¼ tsp | salt |
| 2 tbsp | cocoa powder |
| 1 tbsp | black sesame seeds |
| 100 g | dark chocolate, coarsely chopped |
| 150 g | walnut kernels, roasted, coarsely chopped |
| 1 tbsp | black sesame seeds |
How it's done
Mixture
Place the butter and sugar in a bowl, beat using the whisk attachment on a mixer. Add the oil and eggs and continue to beat until the mixture becomes lighter in colour.
Dough
Place the flour and all ingredients up to and including the walnuts in a bowl, mix, add to the mixture, quickly combine to form a soft dough, do not knead.
Cookies
Shape the dough into approx. 15 balls using an ice cream scoop or two tablespoons and place them on two baking trays lined with baking paper, leaving plenty of space between each. Flatten the balls a little and sprinkle with sesame seeds.
To bake
Approx. 15 mins. in an oven preheated to 180 °C (convection). Remove from the oven, allow to cool slightly, leave to cool completely on a rack.
