Baked mashed potatoes with cheese
Ingredients
for 4 people
| 1 kg | mealy potatoes, peeled, cut into approx. 2 cm pieces |
| salted water, boiling | |
| 2 dl | sour single cream |
| 200 g | grated Cheddar |
| ½ tsp | salt |
| a little | pepper |
| 50 g | grated Parmesan |
| 30 g | panko breadcrumbs |
| 1 bunch | chives, finely chopped |
How it's done
Mashed potatoes
Cook the potatoes, uncovered, in simmering salted water for approx. 20 mins. until very soft. Drain the water, allow the residual moisture on the potatoes to evaporate by shaking the pan on the switched-off hob. Press the potatoes through a food mill or mash them with a potato masher. Add the single cream and Cheddar, mix well, season. Arrange the potatoes in the prepared dish, sprinkle Parmesan and breadcrumbs on top.
To bake
Approx. 25 mins. in the centre of an oven preheated to 200 °C. Remove, sprinkle with the chives.
