Ingredients

for 4 people

Ratatouille
1 ½ tbsp olive oil
onion, finely chopped
garlic cloves, finely chopped
2 tbsp tomato puree
courgette, cut into cubes
red pepper, cut into cubes
aubergine, cut into cubes
400 g tomatoes, cut into cubes
2 tbsp balsamic vinegar
¾ tsp salt
a little  pepper
2 sprig oregano, finely chopped

How it's done

Ratatouille

Heat the oil in a pan. Add the onion and garlic, steam for approx. 2 mins. Add the aubergine, courgette and pepper, steam for approx. 5 mins. Add the tomato puree and tomatoes, steam for approx. 5 mins. Add the balsamic, simmer for approx. 2 mins., season, cover and simmer for approx. 10 mins. until soft. Add the oregano, mix and plate up.
