Tiramisu ai frutti di bosco
Ingredients
for 4 people
| 300 g | mixed berries (e.g. raspberries, blueberries, currant) |
| 2 | oranges, all of the juice (yields approx. 200 ml) |
| 5 | cardamom pods, crushed |
| 3 tbsp | coarse cane sugar |
| 250 g | mascarpone |
| 3 tbsp | milk |
| 1 ½ dl | full cream, beaten until stiff |
| 200 g | Fine Food Savoiardi (Italian sponge finger biscuits) |
| 20 g | freeze-dried strawberries, finely chopped |
How it's done
Berries
Place the berries in a pan along with all the other ingredients up to and including the sugar, mix, bring to the boil. Reduce the heat, cover and simmer for approx. 10 mins., leave to cool, remove the cardamom.
Cream
Combine the mascarpone and milk in a bowl. Using a rubber spatula, carefully fold in the whipped cream.
Tiramisu
Place half of the sponge fingers (sugar side down) in the dish, spread half of the berries and cream on top. Cover with the remaining sponge fingers. Top with the remainder of the berries and crème, cover and chill for approx. 2 hrs.
To serve
Sprinkle the strawberries over the tiramisu.
