Herb pasta salad
Ingredients
for 2 people
| 200 g | fregola sarda (e.g. Fine Food) |
| salted water, boiling |
| 1 bunch | coriander, roughly chopped |
| 1 bunch | basil, roughly chopped |
| 1 bunch | flat-leaf parsley, roughly chopped |
| 2 tbsp | lemon juice |
| 1 tbsp | olive oil |
| ¼ tsp | salt |
| a little | pepper |
| 100 g | grated Sbrinz |
| 30 g | grated Sbrinz |
How it's done
Pasta
Cook the pasta in boiling salted water until al dente. Drain the pasta, retaining approx. 2 dl of the cooking water in a measuring cup, let it cool slightly. Rinse the pasta with cold water, drain, leave to cool.
Sauce
Add the coriander and all the ingredients up to and including the pepper to the cooking water, puree. Place the sauce, cheese and pasta in a bowl, mix.
To serve
Plate up the pasta salad, sprinkle with cheese.
