Strawberries with burrata and mint pesto

Ingredients

for 2 people

Pesto
1 bunch peppermint, leaves torn off
1 dl olive oil
organic lime, use a little grated zest and 1 tbsp of juice
1 tsp liquid honey
½  red chilli, deseeded, roughly chopped
20 g pine nuts, roasted
20 g grated Parmesan, grated zest and 3 tbsp of juice
¼ tsp salt
a little  pepper
To serve
50 g rocket
250 g strawberries, quartered
200 g burrata piccola
20 g pine nuts, roasted

How it's done

Pesto

Place the peppermint and all the other ingredients up to and including the pepper in a measuring cup, puree.

To serve

Arrange the rocket, strawberries and burrata on a platter, top with the pesto and sprinkle with pine nuts.
