Strawberries with burrata and mint pesto
Ingredients
for 2 people
| 1 bunch | peppermint, leaves torn off |
| 1 dl | olive oil |
| 1 | organic lime, use a little grated zest and 1 tbsp of juice |
| 1 tsp | liquid honey |
| ½ | red chilli, deseeded, roughly chopped |
| 20 g | pine nuts, roasted |
| 20 g | grated Parmesan, grated zest and 3 tbsp of juice |
| ¼ tsp | salt |
| a little | pepper |
| 50 g | rocket |
| 250 g | strawberries, quartered |
| 200 g | burrata piccola |
| 20 g | pine nuts, roasted |
How it's done
Pesto
Place the peppermint and all the other ingredients up to and including the pepper in a measuring cup, puree.
To serve
Arrange the rocket, strawberries and burrata on a platter, top with the pesto and sprinkle with pine nuts.
