Pan-fried persimmon with yoghurt
Ingredients
for 2 people
| ½ tbsp | olive oil |
| ½ tbsp | liquid honey |
| ¼ tsp | cinnamon |
| 1 | persimmon, cut in half |
| ½ tbsp | olive oil |
| 150 g | plain greek yoghurt |
| 2 tbsp | salted, roasted pistachios, roasted, coarsely chopped |
| 1 tbsp | liquid honey |
How it's done
Marinade
Mix the oil, honey and cinnamon in a small bowl.
Persimmons
Brush the persimmon with the marinade. Heat the oil in a non-stick frying pan. Place the persimmon in the pan and fry for approx. 4 mins. on each side.
To serve
Plate up the yoghurt, top with the persimmon. Sprinkle with pistachios and drizzle with honey.
