Whipped feta with cucumber
Ingredients
for 4 people
| 200 g | feta, cut into pieces |
| 100 g | sour single cream |
| 2 tbsp | olive oil |
| 1 | organic lemon, a little grated zest and 1 tbsp of juice |
| a little | pepper |
| 1 ½ tbsp | white balsamic vinegar |
| 2 tbsp | olive oil |
| ¼ tsp | salt |
| a little | pepper |
| 1 | cucumber, cut into cubes |
| 1 bunch | peppermint, finely chopped |
| 1 bunch | basil, torn into pieces |
How it's done
Feta
Place the feta in a measuring cup along with all the other ingredients up to and including the pepper, puree with a hand blender until creamy. Spread the feta cream on a platter.
Cucumber
Whisk the balsamic and oil in a bowl, season the sauce. Add the cucumber and herbs, mix, serve on the feta.
