Veal cutlets with garlic mayonnaise

Ingredients

for 4 people

To prepare
veal cutlets (each approx. 250 g)
Mayonnaise
fresh egg yolk
1 tsp mild mustard
1 tsp soy sauce
Black garlic bulb
¼ tsp salt
1 dl rapeseed oil
Charcoal/gas/electric grill
2 tbsp olive oil
1 bunch thyme, finely chopped
1 tsp salt

How it's done

To prepare

Take the meat out of the fridge approx. 30 mins. prior to grilling.

Mayonnaise

Place the egg yolk and all the other ingredients up to and including the salt in a measuring cup, puree. Add the oil drop by drop to begin with, then more gradually, pureeing constantly to form a thick mayonnaise.

Charcoal/gas/electric grill

Mix the oil, thyme and salt, brush over the cutlets. With the lid down, grill over/on a medium heat (approx. 200 °C) for approx. 4 mins. on each side. Remove the cutlets from the grill, wrap tightly in foil and leave to rest for approx. 5 mins. Serve with the garlic mayonnaise.
