Cabbage omelette on a rice paper

Ingredients

for 4 people

Cabbage mixture
600 g white cabbage, very thinly sliced
onion, cut into thin slices
fresh eggs
red chillies, deseeded, finely chopped
3 tbsp soy sauce
Omelettes
  sesame oil for frying
rice paper
To serve
4 tbsp sweet chilli sauce
4 sprig coriander, leaves torn off

How it's done

Cabbage mixture

Place the white cabbage in a bowl along with all the other ingredients up to and including the soy sauce, mix well.

Omelettes

Preheat the oven to 60 °C, warm the platter and plates. Heat a dash of oil in a non-stick frying pan. Place one rice paper in the pan, spread ¼ of the cabbage mixture on it, press down slightly, fry for approx. 3 mins. on each side. Fold the omelette and keep warm. Cook 3 more omelettes with the remaining rice papers and cabbage mixture.

To serve

Plate up the omelettes, top with the sweet chilli sauce and coriander.
