Ingredients

for 4 people

Onions
1 ½ tbsp olive oil
red onions, halved, cut into thin strips
1 tbsp sugar
2 pinch salt
Beans
½ tbsp olive oil
garlic clove, squeezed
2 tbsp tomato puree
1 tsp smoked paprika
1 tsp salt
a little  pepper
2 tin white beans (approx. 400 g each), rinsed and drained
5 dl coconut milk

How it's done

Onions

Heat the oil in a non-stick frying pan. Add the onions and sugar, sauté for approx. 20 mins., stirring occasionally until the onions are golden brown. Season with salt. Remove and set aside.

Beans

Heat the oil in the same pan, add the garlic, tomato puree and paprika, sauté for approx. 2 mins, season to taste. Add the beans and coconut milk, bring to the boil. Reduce the heat, simmer (uncovered) for approx. 10 mins, serve. Garnish with the onion.
