Asparagus with radishes
Ingredients
for 4 people
| 1 tbsp | olive oil |
| 500 g | white asparagus, peeled, cut into approx. 3 cm pieces |
| 500 g | green asparagus, lower third peeled, cut into pieces approx. 4 cm long |
| ½ tsp | salt |
| 3 tbsp | peanut cream |
| 1 | lime, all of the juice (yields approx. 50 ml) |
| ½ dl | water |
| 1 tbsp | soy sauce |
| a little | pepper |
| 1 bunch | radish, very thinly sliced |
| 50 g | Parmesan, very thinly sliced |
| 1 bunch | Thai basil, torn into pieces |
How it's done
Asparagus
Heat the oil in a non-stick frying pan. Reduce the heat, add the asparagus, season with salt, stir fry for approx. 10 mins.
Peanut dressing
Place the peanut mousse in a measuring cup along with all the other ingredients up to and including the pepper, puree.
To serve
Serve the radishes with the asparagus on plates. Drizzle with the dressing, arrange the Parmesan and basil on top.
