Whipped cottage cheese with asparagus
Ingredients
for 4 people
| 1 tbsp | olive oil for frying |
| 500 g | green asparagus, cut off the lower woody ends |
| ¼ tsp | salt |
| 200 g | plain cottage cheese |
| 2 pinch | salt |
| ½ bunch | peppermint, finely chopped |
| ½ dl | olive oil |
| 2 pinch | salt |
| 1 | organic lime, use a little grated zest |
| ¼ tsp | Za'atar (spice mix) |
| 2 sprig | peppermint, finely chopped |
How it's done
Asparagus
Heat the oil in a wide non-stick frying pan. Add the asparagus, fry for approx. 8 mins., season with salt.
Cottage cheese
Place the cottage cheese in a measuring cup, puree until smooth, season with salt. Serve the whipped cottage cheese on plates.
Peppermint oil
Place the peppermint and oil in a measuring cup, puree, season with salt. Mix in the lime zest.
To serve
Arrange the asparagus on the cottage cheese, drizzle with peppermint oil, and sprinkle with za'atar and peppermint.
