Ingredients

for 1 litre

Lassi
cucumber, halved lengthwise, deseeded
100 g baby spinach
½ bunch peppermint, leaves torn off
50 g dates, pitted
lime, the whole juice
180 g plain yoghurt, 2 tbsp set aside

How it's done

Lassi

Place the cucumber and all the other ingredients up to and including the yoghurt in a measuring cup, puree.

To serve

Pour the lassi into the glasses, use the reserved yoghurt to create a marble effect.
