Vegetable fritters with hummus

Ingredients

for 4 people

Vegetables
1 tbsp olive oil
onions, cut into thin slices
300 g carrots, coarsely grated
200 g white cabbage, very thinly sliced
100 g frozen peas, defrosted
½ tsp salt
Batter
100 g toast bread, cut into cubes
100 g dried meat (jerky), cut into strips
eggs, beaten
2 tsp dried Italian herbs
1 tsp garlic powder
¼ tsp salt
a little  pepper
Fritters
  olive oil for frying
To serve
400 g hummus

How it's done

Vegetables

Heat the oil in a pan. Add the onions, sauté for approx. 2 mins. Add the carrots, cabbage and peas, cook for approx. 10 mins., season with salt.

Batter

In a bowl, mix the bread with all the other ingredients up to and including the pepper. Add the vegetables, mix together, leave to stand for approx. 5 mins.

Fritters

Heat a dash of oil in a non-stick frying pan. Reduce the heat, add the batter to the pan in batches (3 tbsp per fritter), and fry for approx. 3 mins. on each side. Remove, drain on kitchen paper.

To serve

Plate up the hummus with the fritters.
