Apricot and goat's cheese dressing

Ingredients

for 5 dl

Dressing
apricots, halved, pitted, cut into pieces
50 g dried apricots, cut into pieces
150 g soft goats' cheese
½ dl apple vinegar
½ dl olive oil
1 ½ dl water
1 ½ tsp salt
¼ tsp pepper

How it's done

Dressing

Place the apricots and all the other ingredients in a measuring cup, puree. Pour the dressing into a clean bottle, seal tightly.
