Lemon quark with blueberries
Ingredients
for 4 people
| 150 g | hulled pearl barley |
| water, boiling |
| 500 g | low-fat quark |
| 250 g | plain cottage cheese |
| 1 | organic lemon, grated zest and 3 tbsp of juice |
| 2 tbsp | maple syrup |
| 400 g | blueberries |
| 2 tbsp | maple syrup |
| 2 tbsp | pumpkin seeds |
How it's done
Pearl barley
Cook the barley in boiling water for approx. 30 mins. until al dente. Pour into a sieve, rinse with cold water and drain.
Bowl
In a bowl, combine the quark with all the other ingredients up to and including the maple syrup. Mash half of the blueberries with a fork, add to the barley, mix, and serve in bowls.
To serve
Top with the remaining blueberries, maple syrup and pumpkin seeds.
