This year, I've given the classic churro a makeover and made these delicious cinnamon cookies with frosting! Perfect for anyone who loves churros, likes to be creative in the kitchen and is looking for a simpler version that is easy to bake. These churro cinnamon cookies combine the best of both worlds. They're crispy on the outside, soft on the inside and come with a generous helping of cinnamon!

Ingredients

for 10 pieces

Dough
110 g butter, soft, cut into pieces
100 g sugar
1 parcel vanilla sugar
1 tbsp cocoa powder
1 tbsp cinnamon
1 pinch salt
½ dl oat drink
160 g white flour
To shape
2 tbsp sugar
1 tbsp cinnamon
Frosting
80 g butter, soft, cut into pieces
3 tbsp sugar
1 tsp cinnamon
a little  sugar, to sprinkle

How it's done

Dough

In a bowl, beat the butter with all the other ingredients up to and including the salt, whisk in the oat drink. Add the flour, mix.

To shape

Divide the dough into 10 portions, shape into balls. Place on a baking tray lined with baking paper, leaving a little room between each ball, flatten gently. Mix the sugar and cinnamon, sprinkle on top.

To bake

Approx. 10 mins. in an oven preheated to 180 °C (convection). Remove from the oven, leave the cookies to cool on a rack.

Frosting

Mix the butter, sugar and cinnamon, spread on top of the cookies using the back of a spoon, sprinkle with a little sugar.
