Plum muffins
Ingredients
for 12 pieces
| 300 g | white flour |
| 100 g | cane sugar |
| 2 tsp | baking powder |
| 1 ½ tsp | cinnamon |
| 3 | eggs |
| 180 g | vanilla yoghurt |
| 1 ½ dl | rapeseed oil |
| 1 tsp | vanilla paste |
| 4 | plums, cut into cubes |
| 6 | plums, halved, pitted |
| icing sugar, to dust |
How it's done
Muffin mixture
Mix the flour, sugar, baking powder and cinnamon in a bowl. Combine the eggs, yoghurt, oil and vanilla paste, add to the flour, mix together. Mix in the plums.
Muffins
Transfer the mixture to the prepared tin, place a plum half on top of each muffin, press in.
To bake
Approx. 30 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, allow the muffins to cool slightly, remove from the tin, leave to cool completely on a rack. Dust the muffins with icing sugar.
