Penne alla vodka
Ingredients
for 4 people
| 100 g | bacon strips, cut into thin slices |
| 1 | shallot, finely chopped |
| 2 | garlic cloves, finely chopped |
| 1 ½ dl | vodka |
| 350 g | tomato sauce |
| 2 dl | full cream |
| ½ tsp | oregano |
| ½ tsp | salt |
| ¼ tsp | pepper |
| 40 g | grated Parmesan |
| 300 g | pasta (e.g. penne rigate) |
| salted water, boiling | |
| ½ bunch | basil, leaves torn off |
How it's done
Sauce
Without adding any oil, gently fry the bacon in a frying pan until crispy, then reduce the heat. Add the shallot and garlic, sauté for approx. 2 mins. Pour in 100 ml of vodka and reduce to half the amount. Pour in the tomato sauce, cream and the remainder of the vodka, bring to the boil, season. Reduce the heat, simmer for approx. 4 mins., stirring occasionally. Mix in the parmesan.
Pasta
Cook the pasta in boiling salted water until al dente, drain, mix into the sauce and plate up. Garnish with the basil.
