Salmon and leek pasta
Ingredients
for 4 people
| 300 g | pasta (e.g. Tagliatelle) |
| salted water, boiling |
| 1 tbsp | olive oil |
| 400 g | leek, cut into strips |
| 2 | garlic cloves, finely chopped |
| 1 tbsp | honey |
| 2 tbsp | miso paste |
| 150 g | plain greek yoghurt |
| 100 g | grated Cheddar |
| 2 tbsp | lemon juice |
| salt and pepper to taste |
| 1 tbsp | olive oil |
| 400 g | salmon fillets, in 4 slices |
| ¼ tsp | salt |
How it's done
Pasta
Cook the pasta in boiling salted water until al dente. Drain the pasta, reserving approx. 200 ml of the cooking water.
Leek
Heat the oil in a frying pan. Add the leek, stir fry for approx. 5 mins. Add the garlic, cook briefly. Reduce the heat, add the honey, miso and reserved cooking water, simmer for approx. 2 mins. Return the leek and pasta to the pan, mix, heat through. Mix in the yoghurt, cheese and lemon juice, season.
Salmon
Heat the oil in a non-stick frying pan. Salt the salmon, fry for approx. 3 mins. on each side. Remove, serve with the pasta.
