Mango and citrus porridge

Dish up some holiday feeling at the breakfast table! This porridge combines the tropical flavours of mango, citrus fruit and coconut. It's best enjoyed as a cold refreshment in summer, straight from the fridge.

Ingredients

for 4 portions

Puree
1 ½  mangoes, cut into small pieces
4 tbsp maple syrup
Porridge
2 ½ dl coconut milk
½ dl water
120 g fine whole-grain rolled oats
40 g coconut flakes
4 tbsp cashew cream
4 tbsp maple syrup
organic lemon, grated zest and 2 tbsp of juice
Topping
½  mango, cut into cubes
1 tsp coconut flake

How it's done

Puree

Place the mangoes and maple syrup in a measuring cup, puree.

Porridge

Mix all the ingredients in a bowl and leave to soak for approx. 10 mins.

Topping

First pour the mango puree and then the porridge into the glasses, top with the mango cubes and coconut flakes.
