Mango and citrus porridge
Ingredients
for 4 portions
| 1 ½ | mangoes, cut into small pieces |
| 4 tbsp | maple syrup |
| 2 ½ dl | coconut milk |
| ½ dl | water |
| 120 g | fine whole-grain rolled oats |
| 40 g | coconut flakes |
| 4 tbsp | cashew cream |
| 4 tbsp | maple syrup |
| 1 | organic lemon, grated zest and 2 tbsp of juice |
| ½ | mango, cut into cubes |
| 1 tsp | coconut flake |
How it's done
Puree
Place the mangoes and maple syrup in a measuring cup, puree.
Porridge
Mix all the ingredients in a bowl and leave to soak for approx. 10 mins.
Topping
First pour the mango puree and then the porridge into the glasses, top with the mango cubes and coconut flakes.
