Coffee vodka cake pops
Ingredients
for 12 pieces
80 g | butter, soft |
50 g | icing sugar |
1 tbsp | instant coffee |
2 tbsp | cocoa powder |
160 g | light sponge cake base, crumbled |
3 tbsp | vodka |
1 bag | dark cake icing (approx. 125 g) |
12 | wooden sticks |
1 bag | white cake icing (approx. 125 g) |
½ tsp | instant coffee |
1 tsp | Cocoa Nibs |
How it's done
Pops mixture
Place the butter in a bowl, add the icing sugar, beat using the whisk on a mixer until light and creamy. Add the coffee powder and cocoa powder, mix. Add the sponge and vodka, mix. Divide the mixture into 12 portions, shape into balls, cover and chill for approx. 1 hr.
Dark chocolate
Melt the cake icing in a hot bain-marie, pour into a small bowl. Insert the wooden skewers into the balls, dip in the icing. Place the pops in tall glasses, chill for approx. 10 mins.
Light chocolate
Melt the cake icing in a hot bain-marie, pour into a small bowl. Dip the pops halfway into the cake icing. Mix the coffee powder and cacao nibs, sprinkle on top of the pops, chill for approx. 1 hr.
