Overnight apple strudel muesli

Ingredients

for 4 people

Muesli
60 g fine whole-grain rolled oats
80 g dark sultanas
60 g almonds, roasted, coarsely chopped
20 g crushed linseed
apples, coarsely grated
organic lemon, use a little grated zest
350 g vegan plain yoghurt substitute
1 tsp cinnamon
2 tbsp sugar
3 dl almond drink
Apples
apples, halved, in fine slices
2 tbsp lemon juice
2 tbsp water
1 tbsp sugar
2 tbsp almonds, roasted, coarsely chopped

How it's done

Muesli

Place the oats in a bowl along with all the other ingredients up to and including the almond drink, mix well. Divide the muesli between the jars, cover and leave to absorb in the fridge for approx. 8 hrs. or overnight.

Apples

Place the apple slices, lemon juice, water and sugar in a pan and mix. Cover and simmer over a low heat for approx. 5 mins. Allow the apple slices to cool slightly, arrange on top of the muesli along with the almonds just before serving.
