Overnight apple strudel muesli
Ingredients
for 4 people
| 60 g | fine whole-grain rolled oats |
| 80 g | dark sultanas |
| 60 g | almonds, roasted, coarsely chopped |
| 20 g | crushed linseed |
| 2 | apples, coarsely grated |
| 1 | organic lemon, use a little grated zest |
| 350 g | vegan plain yoghurt substitute |
| 1 tsp | cinnamon |
| 2 tbsp | sugar |
| 3 dl | almond drink |
| 2 | apples, halved, in fine slices |
| 2 tbsp | lemon juice |
| 2 tbsp | water |
| 1 tbsp | sugar |
| 2 tbsp | almonds, roasted, coarsely chopped |
How it's done
Muesli
Place the oats in a bowl along with all the other ingredients up to and including the almond drink, mix well. Divide the muesli between the jars, cover and leave to absorb in the fridge for approx. 8 hrs. or overnight.
Apples
Place the apple slices, lemon juice, water and sugar in a pan and mix. Cover and simmer over a low heat for approx. 5 mins. Allow the apple slices to cool slightly, arrange on top of the muesli along with the almonds just before serving.
