Burrata & strawberry pancakes
Ingredients
for 4 people
| 100 g | white flour |
| 1 tsp | baking powder |
| ½ tbsp | sugar |
| ¼ tsp | salt |
| 2 dl | milk |
| 2 | fresh eggs |
| 2 tbsp | butter, melted, left to cool |
| clarified butter for frying |
| 2 tbsp | strawberry jam |
| 200 g | Fine Food Burratini , torn into pieces |
| 3 tsp | crema di Balsamico (balsamic cream) (e.g. Fine Food Aceto balsamico) |
How it's done
Batter
Mix the flour, baking powder, sugar and salt in a bowl, create a well in the middle. Combine the milk, eggs and butter, gradually pour into the well while whisking, continue whisking until the batter is smooth.
Pancakes
Heat a little clarified butter in a non-stick frying pan. Reduce the heat, pour the batter into the pan in batches to make pancakes, each approx. 5 cm in diameter. Once the undersides of the pancakes are cooked and no longer stick to the pan, flip them, cook for approx. 1 min. Remove, keep warm.
To serve
Spread the strawberry jam over half of the pancakes. Cover with the remaining pancakes. Top with the burratini, drizzle with the Crema di Balsamico.
