Dried beans with pears and egg

Ingredients

for 4 people

To cook
100 g dried beans
  salted water, boiling
Pears
2 tbsp olive oil
red onions, cut into wedges
garlic cloves, finely chopped
pears, cut into cubes
4 tbsp red wine vinegar
¾ tsp salt
a little  pepper
To serve
hard-boiled eggs, coarsely chopped
100 g feta, cut into cubes
50 g walnut kernels, roasted, coarsely chopped

How it's done

To cook

Cook the dried beans in simmering salted water for approx. 40 mins. until soft, drain and reserve 100 ml of the cooking water.

Pears

Heat the oil in a non-stick frying pan. Stir fry the onions for approx. 5 mins. Add the garlic and pears, stir fry for approx. 2 mins. Add the beans, pour in the vinegar and reserved cooking water, reduce for approx. 2 mins., season.

To serve

Plate up the dried beans, top with the eggs, feta cheese and walnut kernels.
