Watermelon and radish salad with goat's cheese
Ingredients
for 4 people
| 1 | baby watermelon, cut into eighths, in approx. 5 mm thick slices |
| ½ | radish, thinly sliced |
| 1 tbsp | sweet balsamic vinegar |
| 2 tbsp | olive oil |
| 75 g | soft goats' cheese |
| 3 tbsp | milk (see note) |
| 1 | red onion, finely chopped |
| salt and pepper to taste | |
| 3 sprig | peppermint, finely chopped |
How it's done
Melon and radish
Arrange the melon and radish slices on a platter.
Dressing
Place the balsamic in a bowl along with all the other ingredients up to and including the onion, mix well, season, drizzle over the salad. Garnish with mint.
