Watermelon and radish salad with goat's cheese

Watermelon and radish go incredibly well together. Arrange this combination artfully on a plate and drizzle some soft goat's cheese dressing on top. Alternatively, you can toss the salad together in a bowl and mix well with the dressing. Fresh mint provides additional refreshment. Whether with a fresh baguette or without a side dish, this crisp summer salad is a delight.

Ingredients

for 4 people

Melon and radish
baby watermelon, cut into eighths, in approx. 5 mm thick slices
½  radish, thinly sliced
Dressing
1 tbsp sweet balsamic vinegar
2 tbsp olive oil
75 g soft goats' cheese
3 tbsp milk (see note)
red onion, finely chopped
  salt and pepper to taste
3 sprig peppermint, finely chopped

How it's done

Melon and radish

Arrange the melon and radish slices on a platter.

Dressing

Place the balsamic in a bowl along with all the other ingredients up to and including the onion, mix well, season, drizzle over the salad. Garnish with mint.
