Dragon fruit salad
Ingredients
for 4 people
| 3 tbsp | rice vinegar |
| 2 tbsp | olive oil |
| 1 tbsp | liquid acacia honey |
| 1 | organic lemon, use grated zest and 1 tbsp of juice |
| ½ tsp | salt |
| 3 | dragon fruits, peeled, halved, cut into slices approx. 5 mm thick |
| 250 g | mini cucumbers, cut lengthwise into thin slices |
| 1 | red onion, halved, cut into thin strips |
| 1 bunch | coriander, leaves torn off |
| 60 g | salted, roasted macadamia nuts |
How it's done
Dressing
In a bowl, mix the rice vinegar with all the other ingredients up to and including the salt.
Dragon fruit
Add the dragon fruit, cucumber, onion and coriander to the dressing, mix, plate up. Sprinkle with the macadamia nuts.
