Dragon fruit salad

Ingredients

for 4 people

Dressing
3 tbsp rice vinegar
2 tbsp olive oil
1 tbsp liquid acacia honey
organic lemon, use grated zest and 1 tbsp of juice
½ tsp salt
Dragon fruit
dragon fruits, peeled, halved, cut into slices approx. 5 mm thick
250 g mini cucumbers, cut lengthwise into thin slices
red onion, halved, cut into thin strips
1 bunch coriander, leaves torn off
60 g salted, roasted macadamia nuts

How it's done

Dressing

In a bowl, mix the rice vinegar with all the other ingredients up to and including the salt.

Dragon fruit

Add the dragon fruit, cucumber, onion and coriander to the dressing, mix, plate up. Sprinkle with the macadamia nuts.
