Breakfast bowl with quinoa
Ingredients
for 4 people
| 3 dl | water |
| 100 g | quinoa tricolore |
| 2 | red-skinned apples, cut into cubes |
| 1 tbsp | lemon juice |
| 300 g | plain greek yoghurt |
| 1 tbsp | icing sugar |
| 1 | vanilla pod, cut lenghtwise, seeds scratched out |
| 30 g | dried cranberries |
How it's done
Quinoa
Pour the water into a pan, bring to the boil. Add the quinoa, cover and simmer over a low heat for approx. 15 mins. until just soft. Drain the water, leave the quinoa to cool.
Apples
Mix the apples and lemon juice in a bowl, set aside 4 tbsp. Add the yoghurt, icing sugar, vanilla seeds and quinoa to the apples, mix, divide between the dishes.
To serve
Top the quinoa with the cranberries and reserved apples.
