Pan-fried potatoes with chicken

Ingredients

for 4 people

Potatoes
  oil for frying
800 g waxy potatoes, cooked in their skins, peeled and cut into slices approx. 1 cm thick
300 g leek X
½ bunch parsley, finely chopped
40 g grated Parmesan
1 tsp sweet paprika
1 tsp garlic powder
½ tsp salt
a little  pepper
Chicken
1 tbsp olive oil
270 g chicken strips
¼ tsp salt
a little  pepper
To serve
3 tbsp mayonnaise
1 tbsp Sriracha sauce

How it's done

Potatoes

Heat the oil in a wide non-stick frying pan. Add the potatoes, stir fry for approx. 5 mins. Add the leek, stir fry for approx. 5 mins. Add the parsley and parmesan, mix, season.

Chicken

Heat the oil in a non-stick frying pan. Add the chicken, fry for approx. 4 mins., season.

To serve

Plate up the potatoes with the chicken, mix the mayonnaise with the Sriracha sauce, drizzle on top.
