Cottage cheese wraps

These wraps are not filled with cottage cheese, but made of cottage cheese. We're talking a kind of flatbread made with cottage cheese, eggs and a few spices. It is a great substitute for wheat-based flatbread and can be enjoyed as a protein-rich wrap that smells wonderfully of baked cheese.

Ingredients

for 4 people

Cottage cheese mixture
600 g plain cottage cheese
eggs
1 tbsp dried oregano
Wraps
avocados, crushed
tomatoes, cut into small pieces
red onion, cut into thin slices
50 g lettuce leaves
  salt to taste

How it's done

Cottage cheese mixture

Place the cottage cheese, egg and oregano in a measuring cup, puree. Divide the mixture into two equal portions on two baking trays lined with baking paper and spread each one out to make a rectangle of about 20 x 32 cm.

To bake

Approx. 35 mins. in an oven preheated to 170 °C (convection). Change the baking trays round halfway through baking, so that the mixture bakes evenly. Remove, leave to cool.

Wraps

Carefully remove the baking paper from the cottage cheese. Cut each "flatbread" into two pieces, top with avocado and all ingredients up to and including lettuce, season, roll up.
