Quinoa bowl with sesame dressing
Ingredients
for 4 people
| 5 dl | water |
| 200 g | quinoa |
| ½ tsp | salt |
| ½ tbsp | olive oil |
| 450 g | sweet potatoes, peeled, cut into 1 cm pieces |
| ¼ tsp | salt |
| 2 dl | water |
| ½ dl | rice vinegar |
| 1 | lime, the whole juice |
| ½ dl | water |
| 4 tbsp | tahini (sesame paste) |
| 1 tbsp | liquid honey |
| ¼ tsp | salt |
| 250 g | carrots, coarsely grated |
| 200 g | feta, crumbled |
| 1 | avocado, thinly sliced |
How it's done
Quinoa
Bring the water to the boil in a pan. Add the quinoa, cover and simmer over a low heat for approx. 15 mins. until just soft, season with salt.
Sweet potatoes
Heat the oil in a non-stick frying pan. Add the sweet potatoes, stir fry for approx. 5 mins., season with salt. Pour in the water, simmer for approx. 10 mins. until just soft.
Dressing
Combine the rice vinegar with all the other ingredients up to and including the salt.
To serve
Serve the quinoa in bowls, top with the carrots, feta, avocado and sweet potatoes. Drizzle the dressing over the top.
